This is one of my favorite salads, especially in the summertime when all the vegetables are fresh from our garden. And for those of you counting Weight Watcher Points, if you use Fat Free Italian Dressing this recipe is 0 points plus. That’s right ZERO Points Plus!
Cucumber, Tomato, & Onion Salad
2 Medium Cucumbers, peeled
1 medium onion, sliced
1 cup cherry tomatoes or 3-4 large tomatoes, chopped
1/2 cup Fat Free Italian Salad Dressing
Wash all vegetables (of course).
I prefer to quarter my cucumbers but you can slice them or cut the however you wish.
Slice the onion.
If using cherry tomatoes, cut them in half. If using other tomatoes, chop them into bite size pieces.
Mix together in a bowl. Add salad dressing and mix well.
Eat immediately or allow to marinate. The longer it sits the better the flavor is.
