We eat a lot of soup at my house, no matter what the weather’s like. Soup is so easy to prepare, whether I can throw it together in 30 minutes after work, or if I let it cook all day in the slow cooker. I have a handful of soup recipes that I turn to over and over again.
One of my favorites is this Weight Watchers Taco Soup. I have made this recipe many many times and we never get tired of eating it. It is the type of soup that’s even better the next day. The best part of this recipe is that it’s only 2 Points Plus per serving. You could even add a little cheese, sour cream or tortilla chips because it’s such a low point value!
Weight Watchers Taco Soup
1 lb extra lean ground beef or 1 lb turkey
1 large onion, diced
2 (15 ounce) cans chili beans
1 (15 ounce) can zesty beans
1 (15 ounce) can black beans, drained
1 (15 ounce) can corn, undrained
1 (15 ounce) can tomato sauce
1 1/2 cups water
1 (4 1/2 ounce) can chopped green chilies
1 (1 1/4 ounce) package taco seasoning
1 (1 ounce) envelope ranch dressing mix
Brown meat and onion, drain and add remaining ingredients.
Bring to a boil then reduce heat and simmer 30 minutes.
2 points per cup!
