Recently I was introduced to overnight refrigerator oatmeal. I’m not a fan of hot oatmeal but I love the refrigerator version. I have been playing around with some different flavor combinations. I recently posted the recipe to the yummy Blueberry and Banana Overnight Refrigerator Oatmeal.
Last week I created a new recipe that I think is my favorite so far. It’s a tropical version on refrigerator oatmeal.
1/4 Cup Oatmeal
1/4 Cup Diced Mango
1/4 Cup Diced Cantaloupe
Shredded coconut (I used about 1/4 of a cup but you could use more or less depending on your preference.)
3/4 Cup Almond Milk
You can vary the amount of milk you use. I prefer mine a little soupy, like cereal but if you like it thicker just use less milk.
Layer dry ingredients in a container (I like to use a canning jar).
Remove from refrigerator, shake and enjoy.
