Tonight I had four brown bananas that needed to be used. What was the most practical thing to make? Banana bread: Paleo style.
1 cup almond flour
1 cup coconut flour
1/2 cup coconut oil
1/2 cup honey
1 teaspoon baking powder
I baked at 350 degrees for one hour (or until a knife comes out clean from the center.)
The bread turned out very moist, dense, and loaded with sweet banana flavor. Possibly the best banana bread I’ve ever eaten.
Go ahead and add nuts to the recipe if you like. I just have a problem eating something soft with a crunch in it. I’ve always been that way…ice cream with peanuts, almonds, pistachios, walnuts…I just cannot eat it. So add all the nuts you’d like.
After the loaf cooled I went ahead, and in true OAMC fashion, froze several servings for the upcoming week, but not sure how long this will survive in the freezer. It’s just that good!
