This recipe is now one of our favorites. I just made this two nights ago and my husband is already asking for it again.
Thin Sliced Chicken Breast Cutlets
Mozzarella string cheese
2 teaspoons Garlic, minced
1 teaspoon dried basil
1 tomato, diced
Earlier in the day I quickly mixed up the olive oil, garlic, and Basil in a bowl. I covered it and let it sit until I was ready to prepare the chicken. Depending on how many chicken breasts you are using will determine how much oil you will need. You will need about 2 teaspoons of oil for each piece of chicken.
I chose to use the thin sliced breast cutlets but if you have regular chicken breasts and want to relieve some stress you can pound the chicken with your meat tenderizer or a rolling pin works as well.
Lay the pieces of chicken onto a greased baking sheet (I used aluminim foil for easy cleanup). Onto each piece of chicken spread a spoonful of the olive/garlic/Basil mixture.
Next you will add the diced tomatoes onto each piece of chicken.
Then for each piece of chicken I used 1/2 of a piece of string cheese.
Now just roll the chicken around the cheese and tomatoes. I then used a toothpick to secure the chicken. I also drizzled the remainder of the olive oil mixture onto the chicken.
Cover with foil and bake at 350° for 15 minutes. Uncover and bake an additional 10-15 minutes or until the cheese starts looking oozy and melted.
Now for the Weight Watchers points plus…I figured this recipe to be 5 points but the point value could vary depending on the size of each piece of chicken and what brand of cheese you used.
Here is how my points plus value was broken down:
3 oz chicken = 3 WWPP
1 teaspoon olive oil = 1WWPP
1/2 piece of string cheese = 1WWPP
