During the summer we eat a lot of vegetables fresh from our garden, especially squash and zucchini. This means that I am constantly trying to come up with new ways to prepare these vegetables. Check out my recent recipe for Mexican Squash Casserole that’s only 2 Weight Watchers Points Plus.
I kept seeing recipes on Pinterest for stuffed zucchini boats but many of these recipes included meat and sauces that weren’t exactly low in Weight Watcher points. As I tried to come up with a stuffed zucchini recipe that was low in points I remembered the package I received recently as part of a promotion from Red Gold Tomatoes. As part of their Summer Grillin’ Party they sent me a package with 6 cans of Red Gold Tomatoes and one of the flavors included was the Red Gold Petite Diced Tomatoes with Garlic, Basil and Oregano. With that I created these Italian Stuffed Zucchini Boats that are only 2 points plus on the Weight Watchers plan.
Italian Stuffed Zucchini Boats
3 Medium zucchini, cut in half lengthwise, with the seeds scooped out
1 can Red Gold Tomatoes with Garlic, Basil & Oregano, drained
2 slices of bacon, fried and crumbled
1/2 cup fat free Mozzarella cheese, shredded
1/3 cup scallions, chopped
Wash zucchini well and slice in half lengthwise. Scoop the seeds out.
In a bowl, mix together the tomatoes and crumbled bacon. Salt & pepper to taste.
Spoon the tomato and bacon mixture into the middle of the zucchini.
Top with mozzarella cheese and scallions.
To cook, you can bake in the oven at 350 degrees for approximately 15 minutes but I chose to prepare it on the grill. Place the zucchini on the grill on medium heat. Grill for 10-15 minutes until the zucchini begins to soften and the cheese is melted.
