The week after Thanksgiving meant lots of turkey leftovers at my house. To use the last of the turkey I made this Easy Turkey Potpie using a simple Bisquick crust.
1 Bag Frozen Mixed Veggies (mixture with peas and carrots)
1 Can Progresso Recipe Starters Creamy Roasted Garlic
1 8oz package cream cheese
Tear leftover turkey into small pieces.
In a pan mix together the Progresso Recipe Starter and the package of cream cheese. Stir until the cream cheese is melted and smooth.
Add in the turkey and bag of frozen vegetables. You can use fresh veggies as well but if using carrots and potatoes you may want to boil them first so that they are cooked and not still hard and crunchy.
Add salt and pepper to taste.
Pour mixture into a casserole dish.
For the crust, mix together Bisquick and milk. I admit I did not have exact measurements. I mixed the two together, adding more milk as needed, until I had a batter that I was able to pour. Once mixed together so that the Bisquick lumps are gone, pour over the top of your turkey mixture.
Bake at 350 for approximately 30-45 minutes until the crust is golden brown.
