I’m not a fan of cooked oatmeal (except in cookies). I never have been, and I have tried it in many different flavor combinations. Just never could bring myself to eat it. But recently, a coworker introduced me to overnight refrigerator oatmeal. In an effort to try and eat healthier I decided to give this version of oatmeal a try.
If you look on Pinterest you will find tons of recipes for overnight refrigerator oatmeal. Some recipes use Greek yogurt in the oatmeal. I tried that with one version I made and did not like it at all!
I’m made a couple different versions of overnight refrigerator oatmeal recently but this Blueberry and Banana version has been my favorite.
I use a pint size glass canning jar and lid to make the oatmeal in, but you could use any type of container with a lid on it so that you can shake it up.
Blueberry & Banana Overnight Refrigerator Oatmeal
1/4 cup quick oats
1/2 cup unsweetened Almond milk
1 ripe banana, sliced or mashed
1/2 cup blueberries
1 Tablespoon Honey
Pinch of cinnamon
1. Add the ingredients to the jar or container of your choice.
2. Shake well.
3. Refrigerate overnight (or up to 4 days).
4. Remove from refrigerator.
5. Shake and enjoy!
