This summer we have been blessed with a large harvest of sweet banana peppers. While perusing Pinterest for ideas for banana peppers I saw several recipes for stuffed banana peppers and recipes for bacon wrapped banana peppers. Why not combine the two, I thought! Can we say AMAZING?
Bacon Wrapped 3 Cheese Stuffed Banana Peppers
8 Banana Peppers
1 8oz block of cream cheese, softened
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
8 slices of bacon
Slice off the top of the banana peppers. Using a small knife, run it around the inside of the banana pepper and pull the seeds out.
In a bowl, mix together the softened cream cheese, cheddar cheese, and mozzarella cheese. I found that it was easiest to use my hands to mix the cheeses together. It was kind of like making a cheese ball.
Using a small spoon, spoon the cheese mixture into the banana peppers. You can use the handle of the spoon to push the cheese mixture down inside of the pepper.
Once you have the peppers stuffed, wrap one slice of bacon around the peppers. Start at the top of the pepper, laying the bacon over the opening and begin wrapping it around the pepper. You can secure the bacon with toothpicks that you have soaked in water. I recommend using a thick sliced bacon. I made the mistake of using a cheap version of bacon which was very thinly sliced. I had a really hard time getting it to stick together. The bacon wanted to rip and fall apart.
Place the bacon wrapped banana peppers on a grill at low to medium heat. You could also prepare these in the oven.
Grill until the bacon begins to get crisp and the cheese is melting. Beware, the cheese will start to ooze out of the pepper!!!
About 5 minutes before removing from the grill, I brushed some barbecue sauce on the bacon wrapped peppers. I just love the taste of barbecue sauce and bacon together. Yum!
Carefully remove from the grill and enjoy!
