What is this? Why, it is a concoction I made while I was in the kitchen, wanting something Paleo, sweet, and chocolatey!
2 cups shredded unsweetened coconut
1 can coconut milk
3/4 cup soy free cocoa powder
1/4 cup honey
1 teaspoon baking powder
1 teaspoon pumpkin pie spice
I baked this at 350 degrees for about an hour. It turns out like a fudgey brownie. I baked in an eight inch pie plate.
There are other variations to this recipe I want to try, including using melted chocolate instead of cocoa powder. I’m learning that you can do anything in the kitchen…just experiment! Not everything is going to turn out edible, fantastic, or pretty. Just have fun with it!
